What are you eating today?
I made vegetarian Mexican tortilla soup -- I used black beans and some white rice that I had from leftovers. It's a great "clean out the fridge" recipe if you have little bits here and there.
I like Detoxinista's recipe (adapted from an Ina Garten one) and it's easy to make the whole thing vegan. I recommend fresh sliced avocado. Even without tortilla or meat, it was super satisfying!
The kids are eating brown rice & quinoa pasta with mushrooms and a little Parmesan.

So far, a latte (made at home while supervising the kids' breakfast -- so, cold), pb&J sandwich with pringles (lunch with the 4yo), and I'm trying to make a baked ziti for dinner --- which no one but me will enjoy because the kids don't like pasta and DrK has been griping about carbs lately.Wife and #1 Fan of Attending Adult & Geriatric Psychiatrist.

This morning I had a couple crackers while making DHs lunch, then made a smoothie with almond-cashew milk, banana, peanut butter, spinach, and a scoop of yogurt. Lunch was a bagel thin and two friend eggs. Had lots of coffee throughout the day and a chocolate peanut butter Nature Valley protein bar for a snack. Dinner is reheated veggie pizza.

Breakfast was an organic protein shake and some saltine crackers. Lunch was half a yogurt and a homemade scone. Dinner is baked chicken tenders and fries with garlic mayo sauce and steamed veggies. Can't wait until the nausea is gone and I can tolerate the smell of cooking againStudent and Mom to an Oct 2013 boy

Store-bought dough made it super easy! The chicken was leftover from earlier in the week. I roasted the veggies for about 20 minutes while prepping everything else and then they got cooked a bit more while the pizza was baking.
I forgot to pre-heat the pizza stone though, so we didn't get the crispy crust. Next time!

I was sort of good for lunch and used the last of our fajitas to make a chicken quesadilla (lots of onions and peppers with the chicken).
