    Four mile hike in the rain with hubby, leads to Thai takeaway for lunch! I love a hot Thai fried rice on a cold day.

    Dinner will probably be a ground beef shepherd's pie with plenty of veggies. Mmm, comfort food.

      Oven roasted Indian cauliflower with lime yogurt sauce? Maybe a spinach and mushroom-based dish instead? *sigh* I'm kind of all over the place today with meal prep.

        Beef stew with homemade bread. We've been LOVING our organic vege delivery box. The stew had much more variety than usual.

            Last night was these strange but good quinoa and squash fritters with yogurt sauce. Tonight... I'm not sure. It's a day off from the meal plan so usually I just order pizza. Maybe a stir fry tonight, I have some bell pepper and mushrooms I didn't use up this week.

                  Vegan mushroom Alfredo pasta (gluten free TJs pasta).

                  I want teh foods, but teh foods are bad for me, so I get other ingredients and make good fakes.

                    I combined the America's Test Kitchen recipe for slow cooker ground beef chili with a Smitten Kitchen recipe for three-bean chili from dried beans...hope it turns out! Smells pretty great so far. And it should be done when we get home from our long afternoon of sports...

                        It's supposed to cool down again at the end of the week. Got a wild hair and decided to make vegetable broth for the first time, so I may use this in matzo ball soup.

                            Thanks for bumping this thread! I had black beans with diced avocado and tomato, and tortilla chips to dip it, for my lunch after a long walk/run. Filling! Not sure what to do for dinner, but I don't have any meat defrosted nor do I feel like going out for groceries, so it will probably be some kind of beans/rice make-your-own taco or burrito. The kids love that.

                                I made a cauliflower crust pizza. I enjoyed it but realistically won't make this on a regular basis. Why is healthy eating such a PITA? I need quick go -to.
