  • pico de gallo recipe

    Just thought I would post mine, it is really simple to make and keeps for long time. The stuff from the deli is so expensive that I always make my own.

    4 very ripe maters
    1/2 spanish onion
    2 jalapenos, seeded and deveined if you dont want it spicy
    1 lemon
    handful of fresh ( only) cilantro
    salt to taste

    Drop onion, jalapenos and cilantro in food processor. Add at least one t. lemon zest and juice of whole lemon. Grind her up. Then add tomatoes and grind, add salt to taste- i usually use a shocking amount. If it doesnt taste quite right add salt and lemon to taste.

    This is the recipe my family's exchange students from Honduras used- they wanted it at every meal.
