Hey, I'm gettin' out my recipe books and finding my favorites from family, friends, and cookbooks and writing my own cookbook! So, I'll post some of the ones I love to make. I hope you don't mind ~smiles~!
Zucchini Casserole
4-5 c diced zucchini (usually 2 medium-sized ones)
Cook in boiling water for 15 minutes (until tender). Drain.
Put in 1c finely grated carrots & 1/2c onion cut fine with
zucchini to drain. Melt 1 stick of butter & add 1 packet of spices
& bread crumbs from Chicken-flavored Stove Top Stuffing.
Put aside.
Another bowl mix 1 c sour cream, 1 can cream of chicken &
1 1/2 tbsp Miracle Whip. Blend this mixture with squash mix.
Put in casserole dish completely blended. Mix 1/2 stick of butter
with 2c crushed corn flakes and spread on top of casserole.
Bake at 350 degrees for 35-40 minutes or until it begins to bubble
along the sides of the dish.
That's it!
