My Grandma's Meatloaf
2c soft bread crumbs
3/4c minced onion
1/4c minced green pepper
2 eggs
1 lbs. ground beef
2tbsp bottle horseradish
1tbsp salt
1/4c undiluted evaporated milk
1/4c catsup
1tsp dry mustard
1/2c catsup
Preheat oven 400 degrees. Grease shallow baking pan.
Prepare bread crumbs, minced onion and pepper.
Break eggs into large bowl, beat slightly with fork & add meat.
Toss lightly until blended (over mixing tends to toughen meat).
Add crumbs, horseradish and next 4 ingredients. Mix lightly, but wellwith fork.Shape meat into oval ball.Turn into greased pan & smooth into shape.Spread meat with the 1/2c of catsup & bake 40-45 minutes at 400 d. To serve, lift meat loaf with 2 spatulas onto platter.
