My parents have the Chrysler Town & Country and it's great if space is what you need. All the second and third row seats fold down flat into the floor, unlike some vans in which the seats fold down but not completely. The third row is not super comfortable for an adult for long trips but you can easily strap in a couple of car seats. It's not difficult at all to access the third row either. As for gas mileage, it gets between 24 and 30 mpg, depending on where and how it's driven. Shocking, I know.
Right now I have a Honda Accord and I think that's all I'll need for a really long time since I don't think I'll have more than one kid.
