I need a piece of stainless steel for a backsplash that is an irregular size. They sell standard sizes at HD. Can the standard size ones be cut to fit? If not, is there some company I can call that can make a piece that will fit?

Yes, stainless can be cut in any size or shape you want but you're going to have to get a professional to do it. Ask the people at HD who they recommend as installers and then call them. Or you can call the kitchen and bath places and see what they say.
