What do you do if they want to keep Everything they build? I have a million Lego structures everywhere.

This isn't Lego specific but I let them take a picture of their creation and then I try (do not always succeed) to enforce a 24 hour rule. You could also consider a cheap Polaroid camera (they are all the rage) and let the kids take a photo and store it somewhere...kind of like a portfolio.

I feel like J in particular would really enjoy a portfolio. And if you make an initial rule (ONE photo per creation), you should be able to control it.
