Ok, so here's my recipe for Nudelauflauf (casserole) - I modified it a bit so that I wouldn't have to add the msg my mil wanted for it:
Mix two eggs and 1 cup of sour cream together until creamy. Set aside.
Cook a bag of mini penne for about 1 minute less than what the package says. Strain and shock the noodles with cold water. Put in a large mixing bowl. Add finely chopped onions and coarsely cut a small package of smoked ham (Hilshire Farm is fine).
Add the egg mixture to the large mixing bowl, add about a tablespoon of salt. Grind in some pepper.
Put this all in a casserole dish, sprinkle parmesan cheese over it, and bake at 350 for 45-50 minutes.
