        If the alcohol cooks off in the sauce, do you still get puffy? (Just curious ).

        I thought of another option that surely you will have -- use a little bit of the pasta water. It works great to add some liquid to the sauce and has a little starch in it from pasta to thicken things up. I usually scoop some of the water out with a pyrex measuring cup and then drain the pasta, add the pasta to the sauce with some of the cooking liquid (start w/ 1/4 cup or so) over low heat.

        Next time you are at Trader Joe's, get a jar of Better than Bouillon and make us proud.

          What's that? Is it bouillon? Or is it something else---better?! I'm thrown off by the "better than."
          I'll do the pasta water tonight.

          I cook with wine, no problem. White wine. Red wine. Everything. I do coq au vin even. As long as the alcohol is cooked out, it's not a problem and it tastes really good!

          It's not that I don't like the taste of wine (uncooked), it's just uncomfortable with the whole puffiness.

            It's like bouillon, only better! Yeah, it's pretty much bouillon but in a paste, like super dehydrated chicken broth. You add a teaspoon or so to a cup of water to make broth or you can put a little scoop in a sauce for some flavor.

            I think I saw it at TJs last time I was there. You can get ham, vegetable, lobster, and other flavor bases.

                Now, what the hell was that for? :nana: Are you just taunting me? Did you know I just got a box of trader joes stuff today?? I would love that lobster stuff - that could come in seriously handy. But, NOOOOOO. We don't mention stuff until after I've spent $40 on shipping.

                    She shipped it with some peas. I had to toss those out. They were mush puddle by the time they arrived, but the dressing is fabulous, and my husband is so pleased. I also got some other stuff that didn't need refrigeration in the mail today (ground - THANK YOU JULIE!!). Seriously, it isn't fair. It's like I've sworn a vow of celibacy after I've had the best sex ever, only worse, because I like food more than sex.

                      Sorry, Heidi. I'm not sure if they sell the lobster one at TJs. Does that make you feel better? You might be able to find it at your local grocery store.

                        That makes me feel lots better, actually, that it isn't a "Trader Joes" only product.

                          I can't remember where I bought it in Denver but there are no TJs there so it would have been Whole Foods or a Kroger-type store. Maybe you can get the lobster one on-line?

                                Luanne: yours sounds lovely! Dh won't eat brocolli. Nor olives. He's like a child that way...

                                So, what I made turned out ok. Onions, tons of garlic, red bell pepper, can of diced tomatoes, handful of cherry tomatoes. There was enough fluid, so I didn't add anything else. Basil. Salt. Pepper. It turned out ok! I roasted some asparagus to go with it, though come to think of it, I could have put it in the sauce.
                                Dh said he's going to knock himself out under his mask tomorrow! I put at least 6 cloves of garlic in it.
