With barbeque season quickly approaching, this is a quick fun dessert that is downright delicious and easy on the thighs. Very light tasting, it's perfect for hot days. Just don't get like me when you make it and start eating in place of breakfast. and lunch. and in between too.
But... now you know my secret. Every time I make it everyone raves and asks how I did it and I never tell. Don't you feel special?
Strawberry Mash
1 box 'Nilla Wafers
2 cartons fresh strawberries
1 tub Light Cool Whip
Put 'Nilla Wafers in a large thick bag and pound with a meat tenderizer to break up the wafers into crunchy crumbs. Kids can do it - it doesn't need to be perfect and the pieces don't need to by uniform!
Chop strawberries, reserve a couple whole ones for garnish.
Start layering the wafers, strawberries, and cool whip in a large clear bowl and continue layering in that order. You will probably have 9 layers total. I try to end on cool whip and add a few pretty strawberries in the middle to garnish along with a few leftover wafer crumbs.
Just scoop and serve. IT'S SO SIMPLE AND SO GOOD!
For 4th of July, I add blueberries!
