    This was inspired by my former Christmas Tree rosemary bushes. You know the ones that look so cute at Christmas. They're definitely not tree shaped anymore!

    From Cooking Light

    (I also made a smaller quantity since it's just me)

    1/2 pound chicken (about a cup and a half)
    1tbl chopped green onion
    1tbl smoked almonds
    1tbl fat free yogurt
    1tbl light mayo
    1tsp Dijon mustard
    1 tsp rosemary
    S & P to taste (I went w/ no salt because of the almonds)

    Mix well and serve on bread. (I used pumpernickel)

    360 calories per serving, 11.6 g fat, 33.6 g protein, 29.9 g carbs

    It was yummy. It would be even better with chopped green or red seedless grapes I think to help balance out the almonds. and I think maybe some fresh tarrgon instead of or in addition to the rosemary would be fab.
