    I want to make a homemade Mac 'n Cheese this week, good recipes?

    I tried a few times, but they always liked the Kraft stuff better than mine!

      I have altered it a bit. I leave the egg out, and I know I add a little cayenne to the sauce and a panko bread crumb topping mixed with cheese and spices. Read the reviews and sort them by most helpful. I also used mostly cheddar instead of the munster, which I did not have on hand. I probably used heavy cream instead of half and half because I am more likely to have it on hand, but I may have cut it with some skim milk. I don't remember. It's been a little while since I made it.

      In my opinion, you really need the velveeta for the creaminess. Some recipes lack this.

        Bobby Flay just had a Throw Down episode on Mac & Cheese.
        The competitor was dubbed by Oprah as the best Mac & Cheese in America FWIW.

          I have made both of those, and FWIW, I liked the one above better.

            Here's mine...from memory, but I think it's right. People generally really like it:
            Heat up 1.5 Tbsp butter and 1.5 Tbsp canola oil.
            Saute about half an onion (diced) until tender.
            Combine 2 tsp salt, 2 tsp ground mustard, and 4 Tbsp flour (not sure about that last one - gotta go check at home).
            Add it slowly to the pot and mix it all up for awhile.
            Add, slowly, 3 cups of milk (I use lactaid).
            Stir it, smashing up all the little bits, until creamy.
            Add about 3/4 cup of shredded cheddar/mozarella mix.
            Stir until smooth.

            In the meantime,
            Cook up 1 lb of noodles. Rinse them, and put them in a greased casserole.

            Add the cooked mixture from above to the noodles, mix it up, top with another mess of shredded cheese (like another 1/2 cup - I use a whole 8? oz bag for the whole thing), bread crumbs, and paprika.
            Bake at 375 for about 25 minutes, until bubbling.

            ETA correct dry measures!!!

              I about died when the woman said the calorie count for hers but I guess 7 cheeses will do that!

                I love the one from Cook's Illustrated. I found it online pirated from their site, but it sounds right.

                      I like the one NYTimes had in their Food&Wine section a while back. According to the author the key was 2:1 cheese to macaroni ration. That adds calories but tastes awesome.

                        FYI -- I just made the CI recipe tonight and it really is yummy. I make the stovetop version - and I skip the breadcrumb crust. I'm in it for the noodles and cheese.

                              I'm embarrassed to say that our hospital cafeteria has the best Mac & cheese, and they always serve it with a side of stewed tomatoes! Yummy!!
