  • Pecans?

    holy Moly- we have hit the motherlode.

    It took Rick and I about 4 hours to gather all of the pecans in the backyard/driveway that are falling from the 75 foot pecan tree. Now we have 2.5 gallon bucket full of them and they just keep on falling.

    Anyone have any MUST TRY recipes that use pecans?

    I just googled them and they store for 2+ years in the freezer.

    The November Fine Cooking has an article on pecans along with some recipes. They are nice to have around to put in cookies, on top of pancakes, in stuffing, in rice pilaf, on salad, chicken or tuna salad, granola, to snack on...Yum! Pie, of course.

      Go to google and type in "Pecan crusted" and you'll get several great ideas for various fish, chicken dishes!

            I don't have specific tried and true recipes but here are my ideas:

            Chocolate Bourbon Pecan Pie (good old Southern treat!!)

            Cinnamon Roasted Pecans (yummmm... German style!)

            Use in Chicken Salad, crust chicken with crumbs, add to muffins/bagels/banana bread.

                I'm not a huge fan of pecans, but I love this recipe.....

                Candied Pecans

                1 T cold water
                1 large egg (use egg white only)
                1 lb pecans
                1 cup granulated sugar
                1 T ground cinnamon
                1 t salt

                Using a fork, beat water and egg white until frothy.

                Combine egg mixture with nuts in a gallon-sized ziplock bag, coating thoroughly.

                In separate bowl, combine sugar, cinnamon and salt.

                Pour sugar mixture into the ziplock bag containing the pecans and coat well.

                Spread onto ungreased cookie sheet.

                Bake at 225 degrees for 1 hour, stirring occasionally.

                  If you have any "excess" I'd be happy to send you $$$ for postage...yes Dh & I are weird like that,we love to shell nuts and use them for cooking or snacking!

                            we're in! I'll take 2 bags off your hands!...let me know how much it'll weigh and I or you can check the postage rate...I need to dig out my nut cracking tools!!

                            BTW we are having a 36" boxed olive tree planted soon...maybe I'll be sending those out in a couple of years!
