        Depends on what he's picky about. For me (also super-picky), the dealbreakers in the "PNW chicken" are the 2 chopped onions (I don't mind onion flavor, but I do *not* want to bite into a piece of onion), and the mushrooms (just don't like them at all). And I'd probably leave off the parsley, but that's less of a big deal. The rest seems fine to me.

        And, that said, if I was served this, I would eat around the chunks of onion and mushrooms and probably enjoy it.

          Bryn snarfed it down minus the parsley but she isn't a picky eater.

          re: equipment -- I use a skillet and a spatula. One that looks like this is my fave for omelettes:


          Any kind would work but the tapered end seems to help.

            I'm gonna try this,next week, we just had chicken yesterday.
            I am assuming the wine can be replaced w/ chix stock, and the bacon can be omitted or replaced w/ Turkey bacon.

              I read or saw a Martha Stewart thingie on how to cook omelettes, and I find them terribly fun. I can't get this site to load very quickly but it looks like it's got the info...

                I can't seem to get the video running. We have free internet in my apt. building and I think there are lots of people online. I'll try later tonight. Thanks for the link!

                Dh's brother was a vegetarian, and is just starting to re-introduce meat into his diet. In addition, he's picky. I don't want to shock him with too much meat, so I'm hopefully he'll be ok with eating the chicken...

                  Mon Dieu, I've been spelling omelet incorrectly.

                  I think it was this Cook's Illustrated article that started the omelet thing around here:

                    Maybe omelette is a small omelet?
