Cooks Illustrated did a turkey comparison article in this issue. I *think* they brined the heritage turkey. If I can remember, I'll look when I go upstairs. As long as it isn't kosher or has "basting juices" added, it should be ok. I'd be surprised if they messed with a heritage turkey.
