    I'm going to try this. I got it from the Butterball website http://www.butterball.com
    Instead of beef broth I'm going to use the turkey broth I made with the turkey bones.


    Pumpkin Black Bean Turkey Chili

    Pumpkin and dry sherry add an unexpected zing to this vegetable and black bean chili.

    Prep: 20 minutes
    Cook: 1 - 2 hours
    Ready In: Less than 1 1/2 hours
    Servings: 6 servings (about 1 cup each) Method: Boil/Simmer
    Lifestyle: 1 Dish Meals
    Regional Cuisine: Hispanic/Latino

    Ingredients

    2 tablespoons pure vegetable oil
    1 large (1cup), chopped onion
    1 medium (1cup), chopped yellow bell pepper
    1 finely chopped jalapeno pepper
    3 cloves minced garlic
    1 1/2 teaspoons chili powder
    1 1/2 teaspoons ground cumin
    1 1/3 teaspoons dried oregano leaves
    3 cups beef broth
    2 cans (15oz each),rinsed black beans
    2 1/2 cups chopped leftover cooked Butterball Turkey
    1 can (15oz) pumpkin
    1 can (14.5oz) diced tomatoes
    1/2 cup dry sherry
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper
    (optional),shredded cheddar cheese
    (optional) sour cream


    Directions

    1. Heat oil in large saucepan over medium heat. Add onion, bell pepper, seeded jalapeno pepper and garlic; cook 8 minutes, or until onion is tender, stirring occasionally. Add chili powder, cumin and oregano; stir. Cook and stir 1 minute.
    2. Add broth, drained beans, turkey, pumpkin, tomatoes with their liquid, sherry, salt and black pepper; mix well. Bring to a boil, stirring occasionally. Reduce heat to low; simmer 45 minutes, stirring occasionally.


    Suggestions

    Serve chili topped with cheese or sour cream, if desired.

      I used to remove the left over meat. Then throw the carcass /skin and all into a stock pot and boil it like crazy. I would then strain the broth, and throw away the stuff. I then would remove the meat from the fridge and dice it up and add it to the stock. I would add chopped carrots, potato, onions, celery,rice and season w/ salt pepper and any other spices you prefer and cook until the veggies were tender. I usually froze the majority of it, and would pull out container every now and then through out the winter!
