    Hi All,

    So my boyfriends next rounds of tests are coming up and it turns out that I will be there the weekend about 10 days before. I'd love to keep myself busy and help him out by making a couple of meals to freeze so he can just reheat.

    Already on the list are lasangna and beef stew. But you all are absolutely brillant at this so I was wondering if you had any other suggestions. He eats absolutely anything and so will his roomies (all 4 guys are 200+ lbs).

    Any help would be much appreciated!

    Along the line of chili, a heartier soup would freeze well. And along the lines of lasagna, similar pasta dishes like stuffed shells or manicotti freezes well. Burritos?

      How do you freeze enchiladas? Just in freezer bags?

        Breakfast foods are easily freezable. In fact, I've taken to making a huge batch of pancakes once a weekend and freezing the rest- they're so much better tasting than those frozen pancake things. waffles, french toast- they're all freezable.

          Another variation on what has been said -- pasta sauce. My standard gift to moms with newborns is two bags of a caccitore style sauce. They can freeze both or one. I just put it in a ziploc freezer bag.

            You can buy cheap disposable tinfoil pans too at the grocery store with lids and stack them in the freezer if you're worried about not having enough pans to freeze everything in.

              Another option is Taco Soup. You'd just need to brown ground beef and onions (and can freeze that), and then make sure they have the cans of stuff available and a crock pot.

              1 pound ground beef
              1 onion (chopped)
              1 package of taco seasoning
              1 can of chilis
              1 can of diced tomatoes (undrained)
              1 can of rotel (undrained)
              1 can of kidney beans (undrained)
              1 can of corn (undrained)
              fritos
              cheese

              brown the beef and onion. Throw everything in the
              crock pot. (except for the fritos and cheese). Heat

              Pour in a bowl over the fritos.

                My new issue of Real Simple arrived today, and one of the items on the cover says "easy freezer meals". I haven't looked at it yet, but thought I'd share.

                    Oh, and if you see my mom's strata recipes in the next post down, she makes and freezes all of her breakfast casseroles so she always has one ready for guests. (they live in one of those "hey, we're coming over" kind of places- they've had more slumber parties w/ friends and family than they probably ever did as kids!)
