    Hew Boy are these good-

    I won't bother to reprint everything here- but go to http://www.cookinglight.com and look up the Junior Mint Brownies. I just made them tonight to take to boondoggle -

    and they were sooooooo easy! I even doubled the recipe and I never bake. Trust me.

    Here's a couple I've tested and LOVE. The first one makes fudgy, the second one comes out cakelike and chewy.

    Artpark Brownies
    From Ruth Reichl's "Tender at the Bone"

    2/3 c. butter
    5 oz. unsweetened French chocolate
    2 t. vanilla
    4 eggs
    ½ t. salt
    2 c. sugar
    1 c. sifted flour

    Preheat oven to 400 degrees.

    Butter and flour a 9" square baking pan.

    Melt butter and chocolate in double boiler over boiling water. When melted, add vanilla and set aside. Beat eggs and salt in mixer. Add sugar and beat at high speed for about 10 minutes, or until the mixture is quite white. Add chocolate and butter mixture and beat at low speed, just until mixed. Add flour and combine quickly, until there are no white streaks.

    Pour batter into baking pan and put in oven. Immediately turn oven down to 350 degrees and bake for 40 minutes. Do not overbake--these should be fudgy.



    R&R Brownies

    1 3/4 c. sugar
    1 c. butter, softened
    4 eggs
    2 t. vanilla
    1 13 oz jar of hot fudge (Mrs. Richardson's is the best)
    1 1/2 c. flour
    1/3 c. sifted cocoa
    1/4 t. baking powder

    Combine sugar, butter, eggs and vanilla. Stir in fudge. Stir in dry ingredients until combined. Pour into 13 x 9 baking dish. Bake at 350° for 50 minutes. These come out cake-like and chewy.
