  • "Fake" Quiche

    I've been meaning to post this recipe for a while. It's quick and easy and can basically be made with whatever is in your fridge. I got the recipe from one of my cookbooks, but have changed it many times to suit what I have on hand.

    Fake Quiche

    2 cans refridgerated crescent rolls
    1 pkg of sweet italian sausage (you can omit for vegetarians)
    1 onion diced small
    4 eggs
    1 can condensed cream onion soup (I have used different condensed soups for this...onion, celery, chicken, mushroom)
    1 sack of shredded cheese (whatever you like. I tend to use monterey jack or cheddar)

    Slice sausage casings open and scramble the sausages in a pan with diced onions

    Take the crescent roll dough and lay it in a 13x9 pan. Press dough into pan to get rid of "seams" and make sure you push dough up the sides of pan (like a piecrust)

    Whisk together the eggs and the canned soup in a bowl.

    To assemble, spread scrambled meat mix in the dough-lined pan. Pour egg/soup mixture on top. Cover with shredded cheese.

    Bake at 350 for 30-35 minutes. Let it cool for 5-10 minutes, then cut into squares (like lasagna). Makes approx 8 servings (depends on how large your serving squares are).

    Like I mentioned before, the meat and veggie combination can be changed to fit what you like. I like to serve this meal with a salad. Delish!

    just wanted to say I made this earlier this week and it's quite yummy. i used chicken sausage w/red peppers in it, onion, and chopped broccoli. dh really enjoyed it too.

      I just took this out of the oven and looks absolutely wonderful!!!!!!!!!!!!! Can't wait for it to cool off.
