    I have a baby shower that I am throwing in August, and I am wondering if I should do a cake test run. I don't really want to, because I don't need that kind of temptation around, but I do need to know if it is going to work. I have heard conflicting reports on her recipes and their difficulty to covert to other pans and things. I am going to be using a 10" round. I also have a 14" round and 9" rounds, but I think I need the 10" size for the amount of people I am serving and for decorating purposes.

    I have the Cake Bible. Which recipe in there for chocolate cake should I use? I was also thinking of using some kind of cream cheese filling or her mascarpone filling? Do you recommend any of her fillings to go with the chocolate cake. We just did a raspberry one, and I think I would like to stay more on the cream side. The cake definitely needs to be chocolate. That was the mom's one request. So, I am thinking the chocolate domingo cake? Thoughts.

    Jenn, I have been using Wilton's buttercream recipe for my cakes for decorating. Do you have a good decorator frosting that you really like the flavor of? Also, I remember that you found some kind of cake shortening for the frosting. I can't find that anywhere, could you share a link or help a girl out. Of course, I need to be able to pipe and manipulate it easily as well as color it.

    I'd stay away from a cream filling and stick with the fruit filling for August. My wedding cake fell b/c it was too hot and the filling melted (chocolate ganache). It wasn't a hot day (I wasn't sweating). It just makes me nervous.

    As for the icing shortening, I found it at a store here called The Bakers Rack. I assume you've checked specialty decorating stores in your area (not Wilton-loving places). I still haven't settled on a recipe I love, but using the icing shortening has a made a huge taste difference in every recipe I've tried.

      It really needs to be a cream filling. It'll be inside in my air conditioned house, and I can refrigerate it and the cake. I think it'll be fine for like a cream cheese filling, you know? Ugh. I have no stores like that in my area.

          I usually make the All American Chocolate Butter Cake, p 54. The Domingo might be too rich w/ a buttercream frosting.

          I do suggest making a test run. I haven't had a hard time converting to other pan sizes and I think she has something of a guide in the wedding cake section of the book. It might be in cups of batter needed per pan? Maybe just make a small batch of filling and a half recipe of the cake? I've never had a problem with how the cake turns out -- it is delicious and pretty easy to work with.

              Thanks gals. I am definitely ordering some hi-ratio shortening, Jenn. I think that will make a huge difference.

              I don't think I am going to do a test run. Chad thinks I ought to just do it one time, having uber-confidence in my baking abilities. He says if it doesn't turn out, he'll run to the store and buy me some box mixes.

              Oh, and I think I am going to do the Domingo, just because there is no such thing as too rich in my estimation!

                On the cake side of things, I think you should be ok -- at least with the ones I have made from her book. I have found the recipes to be very consistent.

                Just in case, I like the back up plan of sending Chad to the store for mix.

                        Those cakes are amazing! The wedding cake is breathtaking. I would LOVE to be able to make something like that.
