I have about 15 pound of blueberries. I'm planning on making muffins, pancakes, a cobbler and fruit punch. I'm going to freeze a bunch. But was wondering if anyone had some interesting and fun recipes for blueberries. I'd like to enjoy them while they're still fresh.

My favorite is to make blueberry tarts - basically just mini pies in small muffin tins. If you try it, it uses a lot of pie pastry, especially if you do anything fancy (like lattice) on top. I usually do this for my sisters or other tea-type events. They keep well and are good at room temp. I also like to add frozen dollops of whipped whipping cream.
I just made a creamy no-bake blueberry tart that was fairly good. It's in my Betty Crocker cookbook. You do have to pre-bake a pie shell (preferably in a tart pan - I don't have one). Then you gradually mix 2 oz melted white baking chocolate into a cup of room-temperature whipping cream. Whip until stiff peaks form. Pour into the pastry. Top with 2 cups fresh blueberries, and chill in the refrigerator. I think next time I'll add 1/4 c sugar with the whipping cream - it was good, but needed to be just a little sweeter.

We just went to a upick blueberry place yesterday. I didnt get as many as I wanted to, but it was spur of the moment. I am making blueberry syrup right now. http://www.pickyourown.org/blueberrysyrup.htm

And go picking again so I can make jam, a few cobblers and have some for the freezer.Mom to three wild women.

There are a bunch of different recipes if you google it, but basically it is sugar, lemon juice and strained cooked blueberries. Most recipes will say it lasts a month or two in the fridge. I am planning to use it on waffles, as a juice starter mix, to flavor yogurt and kefir, etc. It seemed more versatile than jam.Mom to three wild women.
