Who has a good recipe for frozen margaritas? We're having fish tacos for dinner and I thought I'd try out margaritas in the new blender. Its all about proportions so who's got one?

By Bonnie Walker - Express-News Staff Writer A few weeks ago I talked to a friend who lives out of town. She'd had a margarita (just one) and was happy. Not happy as in too much alcohol, but happy that she'd had a good, cold, limey drink, perfectly mixed and perfect with Mexican food.
We aren't big on mixed drinks at my house, but now and then I'll get the margarita urge and start digging back in the cupboard where we store the neglected tequila and triple sec.
Fresh limes are absolutely required. If someone wants his a little sweeter, we use a simple syrup (a mixture of equal parts sugar and water, cooked until the sugar is dissolved and cooled.)
Because the summer has been so hot and dry recently, we haven't been cooking much in the way of Mexican stews or enchiladas or anything requiring we turn on the stove for any length of time.
This is the time for a salad, and I can think of just the right one for a hot, dry summer and some icy cold margaritas.
One night, while we were on a short vacation at the beach, we threw together a salad that I'll call a Mexican Chopped Salad. It was a treat in several ways — generally healthy, easy to make and no heat required. (We'd served chips and salsa on the side, so this doesn't quite qualify as taco salad.)
A chopped salad also is a good way to use some of the produce you've picked up at the farmers markets. Cubes of zucchini, yellow squash, carrots, cooked green beans and a few cooked black beans only make it better.
My standard salad dressing has for years been to drizzle a little extra virgin olive oil into the salad and toss it well, then salt and pepper it and add a dash or two of red wine vinegar or lemon juice and toss it in, too.
For this salad you can use chopped fresh herbs such as Mexican oregano, cilantro and mint (not peppermint, though) and lemon thyme.
Use turkey instead of roast beef and leave out the avocado and olives if you're counting calories.
Or, if you're at the beach, go for a good long swim or walk earlier in the afternoon. Then, you'll also deserve this margarita: Mix 2 ounces good reposado tequila, 1 ounce Grand Marnier and 1 ounce fresh-squeezed lime juice, with ice in a cocktail shaker. Serve in chilled cocktail glass. (Recipe for Cadillac Margarita, from “Tequila” by Mittie Hellmich.)

Another option I really enjoy is rimming the glass with bar sugar instead of salt. YUMMY!!!!

Don't worry, when your oven is done cooking, I'll take you out to happy hour at Gardunos. They have the BEST margaritas EVER. They are potent and addicting! Hey, that's a great reason to make Albuquerque the meet up spot!
