  • how about apple recipes?

    I've been offline for a while, so I missed the recent pumpkin recipe thread...

    But late this afternoon I pulled out my hat & scarf for the first time to go out and check on DH, who was cutting firewood! The crisp smell of cut wood, plus the combination of other "fall" elements made me want apple walnut raisin scones like my mom used to make. I'll have to find the recipe and post it.

    What do you do with apples? Which kinds of apples do you use for baking? Anyone do stuffed baked apples?

    I use Granny Smith as much as possible because they hold the best without falling apart in the process. I use apples in baking, pancakes, muffins, stuffing in roasted chicken and sauce for sauteed chicken livers. I love apples, if only DH would eat other something besides Golden Delicious.

      I'll have to look for stuffed roast chicken recipes. We had stuffed roast beef last night, and it was terrific. No apples in the stuffing, but we had baked Jonagolds on the side, stuffed with walnuts, raisins, brown sugar, and butter. I think it's worth repeating tonight.

        Soak a roast overnight in baking soda, salt, and water. Cut it in half (I didn't cut it quite all the way through). Stuff with sauteed green pepper, onion, kielbasa, and bacon (and seasoning salt). Dump more of of the sauteed mix on top of the roast. Wrap with aluminum foil and bake in a casserole dish at 350 for 2 hours. It was very tender and flavorful.

          A couple weeks ago DH and I were making jalepeno poppers, stuffed with cream cheese and wrapped with bacon - yum! We decided we're going open a restaurant and name it "The Artery Choke."
          (You know, spinoff on all the "Artichoke" restaurants out there.)

          There should be a surgeon general's warning on some of our favorite recipes.
