    How about split pea?

I tried this Barefoot Contessa recipe, and it turned out great!
Do it with chicken stock (instead of water) if you can!

      Try this:

      1 tablespoon oil
1 lb pork cut into 3/4 inch cubes
1 medium onion cut into thin wedges
      2 cans chicken broth
2 medium baking potatoes, peeled and cubed
2 medium sweet potatoes, peeled and cubed
2 medium carrots sliced into coins
      4 ribs celery sliced
      1 teaspoon paprika
      1/4 teaspoon thyme
      1/4 teaspoon ground black pepper

Heat oil in a Dutch oven over medium-high heat until hot. Add pork and onion. Cook 3-5 minutes or until onion is crisp-tender. Add all remaining ingredients, cover and simmer 30 minutes until vegetables are tender.

We've use a version of this recipie before and it is fabulous.

Simmer the bone for a couple of hours to extract the marrow and then add what ever veggies you have on hand, corn, celery, onion, potato etc. Easy peasy and delish! In fact, DH is at home studying tomorrow and I am requesting it for dinner.
