  • What are you having for dinner?

    I thought it would be fun to share what our plans for dinner are. I'm always interested in what other people eat.

    tonight I'm making Greek Lemon chicken with capers and feta, greek lemon soup and mediterranean couscous. I'm getting hungry already...

    Well, I think my husband is on ACC tonight so he won't get home until 8:30 or so. I'll probably have a bowl of cereal!

        Glad I'm not the only one who does this when left to her own devices for dinner.


        We're having tandoori chicken--I haven't decided whether we should have it over cellophane noodles or rice, though.

          I'll probably make waffles, if I can remember to pick up some milk on the way home. We're de-cluttering and packing up and cleaning to put the house up for sale, and the whole place looks like a bomb hit it. Haven't been cooking much lately...

            Costole di Maiale Beneventana (Italian Porkchops) Fresh green beans with cherry tomatoes, olives and anchovies, Italian Rustic Bread and Mango sorbet topped with macerated mango and blackberries, yum! DH has the next 2 days off so I will be doing lots of cooking.

              You guys sound so gourmet!!! My family eats the basics, mostly because I am not a good cook! My poor husband.

              I am going to check out the cooking light website tonight for ideas.

                We had baked potatoes with broccoli, cheese, and bacon--nothing special but tasted pretty good.
                Jenn--I eat cereal when my hubby's not around also--just doesn't make sense to cook!
                Julie--can I have your recipe for Tandori Chicken? We have been searching for a good recipe and can't find what we're looking for!

                  Well- I ended up making a sausage (chicken with feta and black olive) that I had defrosted a few days ago and I steamed some broccoli and drizzled a little of the olive oils that I made over the holidays.

                    Trisha, your dinner sounds fabulous! You'll have to pass on the green beans recipe. I've never had much luck with pork chops. It's one of those things I stay away from.

                    Julie, ditto on the tandoori chicken recipe.

                    Ahava, I had a waffle just the other night!

                    Jennifer, we don't always eat "fancy". We've had our share of chili dogs, burgers, tacos, spaghetti, frozen pizza (Tombstone's gives great bang for the buck), and macaroni and cheese.

                    Jenn, I changed my dinner plans also. I ended up making baked penne with italian sausage and buttered sourdough bread for dinner. The chicken and feta will have to wait until tomorrow. DH has a business dinner tonight so we're doing leftovers tonight.

                      Wow, we're more of the hamburger helper, chicken tonight, heat-food-up type of family.

                      I double all my fancy-pants recipes to partition and freeze a big portion for future dinners. Last night we defrosted and cooked baked manicotti shells. Recently I just made a mushroom chili from Taste of Home magazine that was pretty decent.

                      I'm really impressed with all these dishes that you all whip up on a Monday night!

                        Well, since it's 'cold' here (like all of 50 degrees) I'm having a chill so I'm going to try my hand at tortilla soup. I've pulled out all of my cookbooks with tortilla soups and I'll combine them into one. (That's my normal MO- I've never been good at following directions!)

                        So, if anyone has ever attempted tortilla soup- let me know your insider secrets.

                          Jenn, DH and I love tortilla soup. I've streamlined a recipe and it's super easy.

                          Tortilla Soup

                          medium onion, diced
                          2-4 garlic cloves, minced
                          1 tsp. cumin
                          2 14 oz. cans chicken broth
                          1 can stewed mexican style tomatoes, chopped
                          1 cup frozen corn
                          2 boneless, skinless chicken breasts, cut in 1" pieces
                          juice of 1/2 lime
                          2-3 green onions, chopped
                          handful of cilantro, chopped

                          1. Saute onion and garlic in olive oil over medium heat 3-4 minutes.
                          2. Add cumin and cook for another minute or two until fragrant.
                          3. Add broth and stewed tomatoes and bring to a boil.
                          4. Add corn then chicken. Bring to boil and cook until chicken is cooked through.
                          5. Add lime juice, green onions and cilantro right before serving.

                          Garnishes: avocado chunks, shredded cheddar cheese, and of course broken tortilla chips. You can also slice corn tortillas into strips, bake them 350 for 15 minutes or so and use them as garnish also if you don't have tortilla chips.

                            Whoa. My husband would have a stroke if I said that was for dinner (he doesn't eat pork for starters), but his little face would light right up if I said we were having chicken breasts marinated in Italian dressing and macaroni & cheese from the box. It's like feeding a four year old. Talk about opposites attracting...I used to cook for a caterer and my favorite restaurants are strange ethnic ones and I'm totally passionate about food, but every time I tell him I'm going to make something he's never heard of, he looks suspicious.

                              Tonight it was Marinated Salmon with Roasted carmalized Sweet Potatoes and Red Pepper Salsa. Turned out pretty well. DH popped open his favorite Pinot Noir and I had some of that "wonderful" Chardonay that I got for Christmas. We live like an hour from what I call decent civilization, you know, places where you can get more than one kind of honey, actually buy decent herbs and bulk spices. It drives me crazy. I have to make a trip into "the big town" once a month to stock up at my favorite organic store and fish market and freeze whatever I get my hands on. Since our DD's are 5 and 2 we go out by ourselves maybe once a year. DH and I make life seem a little more tolerable if on his days off we cook a little over the top.
