Ricotta Cheese?

So I just made DF two lasagnas for test week while I'm gone. He literally could kill himself slowly with food. Two vats of soup, 2 full size lasagnas, 3 vats of pulled pork. All this weekend, all with a barely functional kitchen because of the remodel.

I still have some leftover ricotta cheese though and was looking for a good recipe. All the recipes I can find though seem to need pounds of the stuff and I only have like 8 ounces left over. Plus our food budget is spent for the month so I'm looking for something kind of easy. (I own pretty much every spice and every baking ingredient ever so I could use that but I don't want to go buy lots of fruit or anything).

Anyone know a simple dessert that involves a little ricotta? I have a million jams, etc. that I could use but no phyllo dough or anything.

Ok, enough rambling, can anyone help?

I like it on toast with some jam on top. Don't know if that helps.

I'll have to do it tomorrow considering I just returned from a 15 hour business trip and I'm giving up cheese starting on Weds so it's a race against the clock!

P.S. He managed to dip into the lasagna that was supposed to be saved until next week within 5 hours of my being gone. I legitimately must watch the refrig like a hawk if there's something I don't want him to eat.

I hope you like it. I think they are tasty but not everyone loves them. I'm pretty equal opportunity with desserts.

Cannoli?

Don't ever - EVER - bother to make your own cannoli while living in Cleveland. If you have a hankering for one, haul your cookies to Little Italy and go into Corbos bakery.

And yes, I realize that this thread was asking for recipes -- but the mention of cannoli and knowing you're in Cleveland required me to intervene.

I sympathize. I have to tell DrK not to eat ingredients that I'm saving for dinner. You may want to consider padlocking the fridge.

Excellent point Jane! That would not, however, solve the problem of getting rid of the ricotta in my own refrig.

yeah - i know -- i went off on a Corbos tangent.

don't get anyone else's cannoli -- only corbos. and have some of their cassata cake while you're there. if you go during strawberry season, you'll see two little old people sitting behind the counter with red hands cutting pounds and pounds of strawberries. ooooohhhh -- i miss it.
