So I just made DF two lasagnas for test week while I'm gone. He literally could kill himself slowly with food. Two vats of soup, 2 full size lasagnas, 3 vats of pulled pork. All this weekend, all with a barely functional kitchen because of the remodel.
I still have some leftover ricotta cheese though and was looking for a good recipe. All the recipes I can find though seem to need pounds of the stuff and I only have like 8 ounces left over. Plus our food budget is spent for the month so I'm looking for something kind of easy. (I own pretty much every spice and every baking ingredient ever so I could use that but I don't want to go buy lots of fruit or anything).
Anyone know a simple dessert that involves a little ricotta? I have a million jams, etc. that I could use but no phyllo dough or anything.
