  • Egg casserole help

    Does anyone have an easy egg casserole recipe that they can share? I have to take an egg bake (MN speak) to a function on Tuesday. It can be with or without meat. I've never made one of these before so I don't have any recipes of my own to go off of.

    6-8 eggs or 1.5-2 cups eggbeaters/egg whites
    2 cups milk
    1 tsp dry mustard
    1 tsp salt
    1 Tbsp sour cream
    1/4 tsp pepper
    1 c grated cheese (whatever you like)
    2-3 slices bread, cubed (I use the ends of a loaf of whole wheat or pumpernickel)
    Shreaded veggies, spinach, mushrooms (whatever you like) or cooked sausage, turkey, meat (whatever you like)

    1. Combine eggs, milk, dry mustard, salt, sour cream, and pepper. Beat until frothy. (I use the Cuisinart).

    2. Fold in cheese and veggies or meats. Pour mixture into a greased baking dish and top with cubed bread.

    3. Cover with plastic wrap and refridgerate overnight.

    4. In the morning, bake at 325 for 45-60 minutes or until a knife inserted in the center comes out clean.

      This one is very similar to Mrs. K's but less ingrediants....

      8 eggs beaten
      2 and 1/2 cups of milk
      1 teaspoon dry mustard (if you don't have you can just use some dijon mustard and salt)
      2 cups of cheese
      10 slices of bread

      Optional: veggies or turkey sausage

      Put eggs, milk and mustard in blender (or mix)

      Spray a 9x13 pan with pam
      Tear up bread and place in bottom of pan
      Put cheese over bread
      Pour egg mixture over bread and cheese
      (Add turkey sausage or veggies or any other meat if you wish)

      Cover and refridgerate overnight (or eight hours)
      Uncover and bake at 350 degrees for 45 minutes
