    I LOVE these two (from Southern Living). The watermelon one is my favorite:

    The watermelon/tomato/basil appetizer requires 1.25" cubes of ripe
    watermelon, fresh cherry tomatoes (small & succulent), and fresh basil leaves.

    1. With scissors, cut the basil leaves in quarters so leaf is 1/2"x
    3/4"-ish

    2. Cube the watermelon (nice and ripe, red & rosy)

    3. Wash the cherry tomatoes

    4. With toothpicks, assemble the watermelon, then tomato, adding the basil leaf on top for a flourish.

    Fresh Summer Fruit Soup: Recipe is for 4-5 (use tiny 3.5" bowls from Pier
    1; about $2 each in white, or clear bowls from making chocolate baskets)

    - one package frozen berries, about 1pound
    - 2 T sugar
    - pint fresh strawberries
    - 1/2 fresh lemon
    - 1/2 cantaloupe, diced in small cubes
    - 2 peaches or nectarines, diced in small cubes
    - Bordeaux cookies
    - mint sprigs for garnish

    Blend lightly defrosted berries in blender with sugar to create "soup base"
    (this will be a deep Harvard crimson color). Prepare the other fruit in small
    pieces or cubes after tumbling them in lemon juice (keeps from getting too sweet). Spoon happy yellow fruits into bowls of crimson soup and garnish with mint sprig and serve with Bordeaux cookies for a tasty and healthy treat.

      I've seen something similar with watermelon and feta cheese, no tomato, maybe mint?

        I was thinking something fruity too -- cool and refreshing. I just hate eating greasy things when I'm already hot in the sun.

                  DH has made that (the fruit salsa) before, and it was a hit! I still think about making it sometimes, but I haven't gotten around to it.
