    Let me start by saying that I have some bizarre eating habits. My whole life, I HATED cheese unless it was EXTREMELY balanced out by other flavors (like almost tasteless). I have never been a "crackers and cheese" kind of girl. Up until...June...I wouldn't touch mac and cheese (I'm starting with baby-steps on that one).

    I feel like there may be some cheeses out there that I'd like, I just don't know where to begin. Any suggestions on some "starter" cheeses

    Oh, I'm not a good one to ask about this. I went to college in Wisconsin and love me a sharp cheddar, blue cheeses, bries, etc.

      Would prefer some consistencies over others (soft/creamy or solid/brittle)? Also any leaning toward fruity/spicy/salty/briney/bland? I would probably suggest starting with food that has some cheese as an ingredient or shaved on top first. Do you eat cream cheese?

        Creamy is bad Like cream cheese - yucky! I don't mind things that are heavier on the goat cheese...i like the chalky-ish texture (told you I'm weird!) Not fruity/spicy/etc preferences...I want to start developing a palate for cheese (and yogurt, but that's a whole other thing)

          I would eat cheese on cardboard so I'm no help. I LOVE it. But I might suggest talking to the guy at the cheese counter at your local coop or whole foods. They're pretty knowledgable, will often give you a sample, and just because you ask them, doesn't mean you have to buy it from them!

            I would try something like a Jarlsburg - something firm and nutty. Any sort of swiss would work.

              How about Gouda cheese? It's milder than cheddar, and often called "Kinder-cheese" by the German kids I know.

                Ditto all of this. Have yet to meet a cheese I didn't like. And the cheese counter people can be *very* helpful.

                  What about Manchego? Cheese made out of sheep's milk tends to be less "cheesy" and not as fattening. Do you like feta?
