    It is that time of year, lots of zucchini at the Farmer's Market. Anyone have a favorite recipe? I just found this one that I am going to try. From www.southernfood.about.com


    Zucchini squares, a quiche-like recipe made with eggs and zucchini.
    Ingredients:
    • 3 cups thinly sliced zucchini, unpeeled
    • 1 cup biscuit mix
    • 1/2 cup finely chopped onion
    • 1/4 teaspoon dried leaf oregano
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon salt, or to taste
    • dash garlic powder
    • 2 tablespoons chopped fresh parsley
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup vegetable oil
    • 4 eggs, lightly beaten
    Preparation:

    Combine all ingredients in a large bowl; mix well. Pour mixture into a 13 x 9-inch baking dish. Bake at 350° for about 30 minutes, or until lightly browned. Cut into squares and serve as an appetizer or side dish.

    This is a great Zucchini Spice Cake!


    Zucchini Spice Cake:

    2 cups sugar (granulated)
    1 cup oil
    3 eggs
    1 teaspoon vanilla
    3 teaspoons cinnamon
    2 cups flour
    1/4 teaspoon baking powder
    2 teaspoons baking soda
    1 teaspoon salt
    2 cup shredded zucchini

    mix sugar, oil, eggs, vanilla, and cinnamon. add flour, baking powder, baking soda, and salt. mix together. add zucchini and mix. pour into a bundt pan and bake at 350 for 45 minuters - 1 hour. sprinkle powdered sugar on top for presentation.

        I make zucchini pancakes, same concept as potato pancakes. I shred green and yellow together for some color and sometimes add a carrot, if I have one. The one major difference is that I use bread crumbs instead of flower for zucchini.

          Mmm all of those look really good, but I tend to keep it simple... to quick ideas are:

          1. Cut in half, sprinkle adobo or other seasoning on inside of each half. Roll in foil and cook on the grill!

          2. Cut into pieces and mix with garlic and tomatos and seasonings - sautee.

              I love zucchini!!

              I've done a Zucchini Corn Cake recipe from Wegmans:

              I also love Zucchini Lasagna - a little heavy for summer, but I'm sucker for the pasta/cheese combo with a veggie in it: http://www.marthastewart.com/recipe/...hini%20lasagna

              You could also do stuffed zucchini - halve it, scoop out a bit of it, fill it with already browned ground beef/turkey plus some diced peppers. It would be this recipe, but not with yellow squash: http://www.marthastewart.com/recipe/...uffed%20squash.

              It's also great grilled, roasted, etc. Skewer it and do kabobs. There's a recipe that DF loves that involves kabobs and a yogurt dressing: http://www.marthastewart.com/recipe/...yogurt%20basil

              I could go on and on - I think we buy zucchini every time we are at the grocery store!
