  • Need tofu ideas

    Between the pregnancy limitations and my super high cholesterol I'm running out of ideas what to cook/eat. Does anyone have any tofu recipes they like? So far I've only used it in asian style stir fry but would like to branch out. I've tried searching epicurious and foodnetwork but didn't find anything too inspiring.

    Indian or Thai style curries? I don't have this book, but I like Deborah Madison's other cookbooks:

    There is a spread here called Toby's Tofu Pate that I love. I don't know if it is sold outside the immediate area. I hate to use the word mock but it is sort of like a mock egg salad. It is good with crackers, on a bagel, that sort of thing. I have thought I could probably make something similar it is just easier to buy.

    When I was vegetarian, I would mash it and use it in place of ground meat for things like tacos and sloppy joes. I liked it but if you are used to meat it is not the same. You could also do tofu scrambles and use it instead of eggs -- make chilequiles or that sort of thing.

      the *only* tofu I've ever eaten w/o gagging is Indian.

        I have a stir-fry recipe that I love but don't think that would help since you're looking for something different. If you're looking to make the tofu taste more "meat-like", I have some suggestions - we freeze, then boil extra-firm tofu in its container and then I cut it into two thin slabs and put it in a shallow dish lined with paper towel, put paper towel on top of it as well, and put a cutting board or plate on top with cans or anything heavy to try to get as much of the liquid out of it as possible. That whole process - freezing, boiling, removing liquid - seems to give it a more meaty texture.

          I don't have a problem with tofu texture or taste, I just don't know how to use it instead of meat or eggs. Eating out I've only experienced it in Asian food, hence that's how I use it at home but wanted to branch out. Unfortunately neither DH nor I are big curry fans.

          I'm looking for dishes or ideas where tofu will be able to stand on its own and not make me think "this would have been so much better with meat." I'm not cutting out meat completely but would like to eat less of it, if I can figure out how.

            Ok - so I am not much help because I do not actually have the recipe. BUT I onced had tofu enchiladas that were amazingly yummy...granted the tofu was just there, most of the flavor came from the pico/bean/corn inside. Just thought I'd throw something other than the curry/asian fare.

              Look on the Vegetarian Times website. I think you can also add it to Italian dishes instead of ricotta (or a ricotta-tofu mix). I've blended up tofu and added it to broccoli cheese soup instead of part of the milk. Worked fine. I've also blended it up with Italian dressing mix to use as a veggie dip (I bet ranch would work better, but I don't like ranch dressing.)

                I make veggie lasagna with tofu instead of cheese. I can give you the recipe if you want.

                I made scrambled tofu once, it was pretty good. I usually just use tofu instead of eggs/dairy to bake things, like pumpkin pie.

                When I lived in Boston, whole foods sold tofu salad. That was really good, I should try to make my own. Something like this(but I think you can make it without mayo): http://www.noveleats.com/sidedish/tofu-salad/

                  I like to marinate it (in anything that you'd marinate chicken) and then pan fry it with whatever corresponding side sounds good.

                  I made tofu in peanut sauce a few nights ago and Nikolai LOVED it. (anything with peanut butter is edible in our house)

                    So the lasagna has no meat and no cheese? I'm having a hard time picturing that. I've only seen the no meat version. Does it taste weird?

                    How do you scramble tofu? I'm curious.

                    These are all great idea and exactly what I'm looking for. I have some firm and soft tofu in the fridge and will be experimenting next week. Will let you know what has worked in case anyone is wondering.

                      I think I made this without the nutritional yeast and it turned out fine.

                      The lasagna is with no meat and with tofu instead of ricotta cheese.
