    butternut squash favorites?

    Continuing with the fall recipe theme, what are your favorite butternut squash recipes, soups, etc.?

    DH just made butternut squash bread and muffins this last weekend - delicious. I like the flavor better than pumpkin and I never thought I'd say that. I think he modified the Joy of Cooking recipe for pumpkin bread, I could post it, but I'm pretty sure he adapted it for high-altitude. Yummy!!

      I like them the way Mother Nature intended- slathered with butter and brown sugar.

        A few nights ago I made a baked risotto with roasted butternut squash and gruyere. I'm trying to remember if I posted it here. I'll go look. It is easy and 2 out 3 kids like it.
