  • Sweet Potatoes

    So I went a little crazy at Costco the other day and bought a container (several lbs) of sweet potatoes. It's only DF and I, we aren't hosting any holidays anytime soon, so that's a lot of sweet potatoes for two people. I do like them a lot, but I only know how to bake them (and smother them in brown sugar and butter) and make sweet potato fries.

    Any recipes that you love for sweet potatoes? Anything in particular that can be made ahead of time and frozen?

    Sweet potatos are nice in stews and can be used to replace white potatoes in almost any recipe. In some instances they can substitute for squash (think butternut, not yellow) too.

      I have oven baked them on the oven rack for 45 minutes, and served.
      I have also done a twice baked option, removed the skin, then mashed them by hand and added 1 tbsp of extra virgin olive oil, kosher salt, and 1-2 tsp. of cinnamon (this was for 2 servings).
      They are really good for you, and DH loves them either way (I just nix the usual sugar and butter).

        I will take sweet potatoes (skinned), squash, and I assume it would work with most veggies. I drizzle in olive oil and cover in spices. Bake in an oven on 350 for about 30 mins. I usually do this with pork or chicken. Nice fall veggies!

            We often bake ours in the oven for 45 minutes and then eat with fat free sour cream. Yum!

              Favorite family recipe:

              1 lb ground sausage
              2 sweet potatoes, peeled and sliced
              2 apples, peeled and sliced
              2 tbs sugar
              1 tbs flour
              1/4 tsp cinnamon
              1/4 tsp salt
              1/2 c cold water

              Brown sausage, breaking up large pieces. Drain off fat.

              Mix sugar, flour, cinnamon, salt, and water.

              Layer sweet potatoes, apples, and sausage in a 2-quart casserole dish, and drizzle the water-sugar mixture over the top. Cover dish and bake at 375° until potatoes and apples are tender (about 45 min), stirring once or twice.

                At a restaurant the other day I had a roasted red pepper sweet potato curry bisque. It was DELICIOUS. I wasn't sure if I would like it, but the roasted red peppers gave it a great flavor and the curry gave it a bit of a bite. I have looked a little for a similar recipe, but haven't found one yet. I also tried a recipe from allrecipies.com the other night for sweet potato burritos (I think it said you can freeze them) and they were ok. Other than that we just make fries with them. I can't understand why but dh doesn't like them when they are smothered in butter and sugar.

                  Our ONLY vegetarian restaurant in town does sweet potato gnocchi that are to die for.
