    Heidi, the French Onion soup last month was absolutely wonderful. Can you recommend a Fall soup to go with the November menu. DH and I love soups this time of year and your menus are always spot on. Thanks

    I'm making the Broccoli Risotto this weekend.

    Luanne...you should try the squash and apple soup I posted. It's yummy. And easy

        I love soups. What sounds good? I have a couple of recipes for chicken and dumplings, one has sweet potatoes and parsnips. Really good. The other one is a Mexican style tortilla chicken and dumplings. Also really good. I love baked potato soup, and I have a good recipe for that. I did post a recipe for a corn and crab bisque somewhere on here. The butternut squash soup that Sylvia posted sounds really good. Tell me what you are in the mood for.

            Here is the traditional one with sweet potatoes.


            Chicken and Tortilla Dumplings

            For the chicken -

            Cut into pieces:
            1 1/2 lbs. boneless, skinless chicken thighs

            Dredge In: Brown in 2T oil:
            1/2 cup all-purpose flour
            2 tsp. kosher salt
            1/2 tsp. ground cumin
            1/2 tsp. chili powder
            1/2 tsp. black

            Sweat in 1T oil:
            1 cup yellow onion, chopped
            1/2 cup celery, chopped
            1/2 cup carrot, chopped
            1 tsp. garlic, minced
            2 bay leaves
            1 canned chipotle chile in adobo, minced

            Deglaze with:
            1/4 cup dry white wine

            Stir in:
            Remaining dreging flour

            Gradually add; braise:
            1 qt. low-sodium chicken broth (I used stock)
            1 can (14.5 oz) diced tomatoes with juice

            Stir in:
            Browned chicken
            1/2 cup canned black beans, drained, rinsed
            1/2 cup frozen corn kernels
            1 tsp. chopped fresh oregano
            juice of 1/2 a lime


            For the dumplings -

            Blend:
            3/4 cup all-purpose flour
            3/4 cup masa harina
            1 can (4.5 oz) diced mild green chiles
            3 T. parmesan cheese, grated
            2 1/2 t. baking powder
            2 tsp. sugar
            1 tsp. kosher salt
            1/2 t. white pepper

            Heat:
            2/3 cup whole or 2% milk (I used skim and a little cream)
            3 T. unsalted butter (I used salted)



            Preheat oven to 375 degrees with rack in the center. This is all done
            in one oven safe pot.

            Cut chicken into large pieces. Combine flour and seasonings in a
            resealable plastic bag.
            Dredge chicken in flour, shaking off excess. In a deep ovenproof pot,
            heat 1 T. oil over med-high heat. Brown the chicken in oil. Remove
            to plate. Reduce heat to medium.
            Sweat vegetables, garlic, chile, and bay leaves in oil until softened. 5 minutes.

            Deglaze with wine; simmer until nearly evaporated. Stir in the rest
            of the floor from the dredging bag to coat vegetables.

            Gradually add broth and tomatoes. Cover pot and transfer to the oven; cook for 20
            minutes.

            While stew is in the oven, make dumpling dough.
            Blend ingredients for dumplings in a mixing bowl.
            Heat milk and butter until butter melts; blend into dry ingredients.

            Stir in chicken, beans, corn, herbs, and lime juice before adding dumplings.
            Shape, then drop the dumplings (I used a small ice cream scooper)
            onton the simmering stew. Braise in the oven until dumplings are
            cooked though (toothpick inserted in center comes out clean), about 20
            minutes.


            That's it. It really isn't that hard, even though there are a lot of
            directions. It takes about an hour and a half. It makes enough for
            6-8 people though.

                        I know what you mean. I have so much of it because I also bought a 5 lb. bag for this recipe. I will have to look up some other recipes that use it.
