  • Best Pie Recipe?

    I've signed on to help with the "Pies Across America" thing at the kids' school, and I need to make 2 pies. I'm partial to straight pumpkin, but I imagine there will be a LOT of pumpkin there, and I thought an alternative selection might be nice.

    Suggestions?

    I can't remember the source - it was in a kid's book when I was growing up, and we made it every year around Christmas. You could probably alter a few things (and maybe make your own crust) to avoid plagiarism.

    Peppermint Pie

    1 prepackaged graham cracker pie crust
    24 large marshmallows
    1/2 cup milk
    1 tsp vanilla extract
    1 tsp salt
    6 drops peppermint extract
    7 drops red food coloring
    2 cups chilled whipped topping
    2 Tbsp crushed peppermint candy
    1. In a small saucepan over low heat, mix marshmallows and milk. Stir constantly until marshmallows are melted.
    2. Remove from heat; stir in vanilla extract, salt, peppermint extract, and food coloring.
    3. Place in refrigerator to thicken and cool (about 15 minutes). Mixture is ready when it drops from spoon into mounds.
    4. Stir marshmallow mixture well. Gently fold into whipped topping and pour into pie crust.
    5. Place pie in refrigerator for at least 12 hours. Just before serving, sprinkle with crushed peppermint candy.

      Ok- make that pie but instead of the regular graham cracker crust make a chocolate cookie crust. You used to be able to find chocolate wafer cookies everywhere but I've only seen them made be some organic brand. I bet TJs has some.

      My mom makes a Peppermint Ice Cream pie at the holidays with the chocolate crust. YUM.
