Blue garlic...

  • Blue garlic...

    I baked some chicken tonight (to put in pitas) with garlic, plain yogurt and lemon juice.

    The garlic turned blue. (see photo) A quick google search has led me to believe it's safe to eat, but boy is this creepy.

    that looks like a chicken shistawook -- is it? if so, will you share the recipe? I know nothing about blue garlic, but I've been dying for a good shistawook recipe.

      That is the WIERDEST thing! Did they say what causes it?

      I sounds delicious, but I must admit, it looks like MOLD! I don't know if I'd be able to eat it.

        Garlic turns blue when it cooks if it's stored in the fridge for a bit. It's safe to eat. I think it has to do with oxidation.

          Sorry. Not oxidation. It's the sulfur in the garlic that binds to copper in another ingredient.

            I haven't eaten any yet, but the garlic tastes fine. I'm just going to scrape off the blue and pretend it was never there...it does look so much like mold, though!

            I've never heard of chicken shistawook--it sounds good, though! This was just chicken breasts with a couple tablespoons of lemon juice, some minced garlic, and whatever nonfat plain yogurt I had left. Nothing special

              WOW, this just happened to me tonight for the first time ever!!!!!! I'm so gald I remembered this thread, or I might have trhown it out. Fortunately I'm adding tomato sauce so it won't be noticeable.
