OK- I made a To f-ing DIE FOR dinner tonight. It was supposed to be on sourdough bread to be crostinis but I didn't have any so I made a pot of spaghetti instead.
Step 1:
Cook 1 pound of raw shrimp in 1 cup of water, 6 garlic cloves, 1/8 tsp saffron and when they're done HOLD BACK 1/4 cup WATER- you will need this
Step two: cook some spaghetti/linguine/pasta of your choice
Step three:
Throw the following in a largish pan (a sauté pan not a sauce pan):
3 large very ripe tomatoes. (Mine were about three seconds away from going to the compost pig)
3 smooshed garlic cloves
1 small onion
1.5 tablespoons of honey
1 tsp. olive oil
the 1.4 c. water from the shrimp
1/4 tsp cumin
1/4 tsp cayenne
Cook down for 45 minutes then blend in a blender. (or in Patel's and my case- the VITAMIX SUPER 5000, as seen on TV)
I also cooked some spinach that was nearly over the bend in a bit of olive oil and garlic powder.
So, I layered first the pasta, then the spinach, then the shrimp- (they suggested that that you halve the shrimp length wise for the crostini so I did the same for the pasta and it amazingly made it better because nearly every bite had shrimp) then the sauce. I had grated some fresh pecorino and I put about a tbsp of small shredded cheese on top.
Seriously, it was a-maz-ing. The cayenne cuts the sweetness of the honey but they pair well together. I actually wished I had some bread because that sauce needs to be soaked up in a piece of bread.
