What is your favorite chocolate frosting. I am looking for something that would have the same sort of consistancy/spreadability as buttercream.

I tried out two recipies today and both came out more like a ganache than frosting. I don't know if I did something wrong or if it is just the nature of the recipe.

I made one for my husband's cake last week that turned out great. It was basically a stick of butter whipped in a mixer, add powdered sugar until slightly thickened, then add melted high end chocolate. (I used a block of milk chocolate callebut). It was spreadable, delicious and not at all chalky. I'd use only a little powdered sugar if you are going to go with sweetened chocolate - but more if you want to use a bitter or dark chocolate to melt.

          Re: chocolate frosting

I'm gonna be so not helpful but Cooks Illustrated has a good chocolate frosting recipe. It's packed and so I can't get it out but maybe google can find it?

I always use butter, powdered sugar, cocoa powder, milk, and a little coffee. I guesstimate amounts but always turns out soooo yummy!!
