I made this for my SO's brother when he was over for dinner: it's a fun and refreshing summer treat that can be done in the oven or on the grill.
Ingredients:
1 large ripe pineapple
Skewers
Raw Sugar
(cinnamon if desired)
Dark chocolate 4 oz minimum
1/4 to 1/2 cup of Bailey's Irish Cream ( can substitute heavy cream or milk as welll)(the Alcohol in the Bailey
should cook out, but can always substitute)
2 tablespoon of raw sugar
Skewers: Soak in cold water for about an hour or until soaked all the way through.
Oven: Broil
Grill: Hot
Take 1 whole pinapple, cut off outside rind so that you are left with a cylinder of pineapple.
* Half it, then quarter both halves.
*Take each Quarter and cut into 1/2 inch long ways pieces (so not to dice up the pineapple, but to make 1/2 slivers that are thick enough to have a skewer go into).
*Once you have your pieces, cut off the rind on each piece.
*You should have 15 or so pieces of pineapple that are about 4 inches or so long and thick enough for a skewer.
Insert Skewers into each piece so that they are at least halfway up the pineapple. (this is more important on the grill).
Once each piece is properly skewered, take raw sugar and sprinkle moderate to heavy on the pieces. Make sure you turn the pieces over so that both sides are evenly coated with the sugar. (If desired you can sprinkle with some cinnamon at this time as well).
Place the skewers of pineapple on foil that has some non-stick spray or lightly wiped with oil, and grill or broil until the pineapple caramelized or dark browns on the pineapple. (you will need to flip the skewers over to brown both sides evenly).
Once you flip the skewers over, make your sauce (it won't take long).
Heat chocolate in small sauce pan on med low heat so that the chocolate melts, but doesn't burn. (it will taste burned or overly roasted if cooked too high)
*once chocolate is melted, slowly add your bailey's or cream to the mixture. Then add your sugar. You can add to taste and desired thickness. Remember when the chocolate cools, it should be a sauce that is liquid enough to dip the skewers in, but thick enough that it's not runny.
*keep the sauce stirred and lower the heat so that it thickens slightly.
*If you find that your sauce is too thick or too thin, you can always add a little milk to thin it. To thicken it, you can add more chocolate, and/or turn the heat up slightly*** and once it starts to bubble just a little bit, turn it to low. This helps thicken the sugars.
*Pour into small dipping bowls as desired.
Take your nicely bronzed pineapple from the oven or grill, and place on plates and serve with chocolate sauce!
You can vary this in many ways. you can even drizzle the chocolate sauce over the pineapple if you don't want to mess with dipping bowls.
Remember chocolate sauce is easy! Just remember adding milk, cream, etc (add thinness and softens the brisk taste of the dark chocolate), and watching the heat and stirring will help keep your sauce from getting burnt and get you the desired consistency you want! Increasing heat will thicken sugar, but can also burn it, so be careful!
