        I make the chicken taco soup from all recipes in my crockpot....I don't make it soupy and I add rice. I think it's pretty tasty and it's really easy. If you are interested I can post the recipe again. I think I've already posted it in the crockpot thread.

          Oh and there is a pulled pork recipe that people like (I don't eat it). That would be pretty easy...

              It's not a main dish kind of thing, but I always take a giant tub of homemade salsa and chips. Doesn't need any heating or refrigeration and my family will gladly blow through the leftovers.

                I love allrecipes.com. My new found favorite is Charley's Slow Cooker Mexican Style Meat. It's the most delicious meat and you can use it for enchiladas, stew, or a hot beef sandwiches. SO GOOD!!! I suggest not searing the meat first so the juice can soak in. It's definitely spicy so only make this for your loved ones that can handle the heat.

                  I like making a pasta salad. I use cherry tomatoes, cucumber, cubes of cheese, olives (sometimes) & pasta. I make a simple dressing of balsalmic vinegar, basil, oregano, garlic powder & onion powder w/olive oil & salt & pepper. You can easily make a huge vat & it goes fast too. Yummy
