        I made fresh pumkin puree yesterday and it wasn't hard. Just cut, cleaned, baked, scooped and blended. I cleaned the seeds and roasted them too. Super yummy. I made some muffins this morning and plan on making cookies or bread later today or tomorrow. I couldn't find canned pumpkin for months and months. The draught is over though. I hope you find some soon!

            I JUST found some at Walmart (not a superwalmart, just a regular one) and it was at the end of an aisle. They only had the big cans, but I was so excited to find it I bought two!

              I've been having a really hard time finding pumpkin, too. Boo!
              World Market has the organic stuff. If you have a Sprouts or Newflower Market nearby, they have some too.
              Married to a newly minted Pediatric Rad, momma to a sweet girl and a bunch of (mostly) cute boy monsters.

                Our garden had a poor showing this year, so instead of the close to twenty pumpkins we grew last year, this year we had two. They were small but just turning a lovely shade of orange. Then last weekend they were gone! Some punk actually entered our back yard (there's a chain link fence that opens to an alley) and cut off our only two pumpkins! So disappointing. I, too, have to search them out at the grocery store.

                      Ugh, squirrels... such a hassle. Also neighbors, apparently. I was dead set against an ugly privacy fence, but I'm starting to rethink my position.

                          Oh my goodness, I just typed this all out and lost it... Aarrgghh... But here it is, again.
                          This is the first thing that I ever cooked for my husband and he loved it!

                          Pumpkin Sausage Pasta
                          1 lb penne pasta
                          * cook, drain and set aside
                          1 lb Italian sausage
                          * brown in a frying pan, when done remove and set aside. Drain fat from pan and put pan back on stove.
                          1 med onion
                          4 cloves garlic

                            Okay.... So I am officially technologically challenged...
                            1 med onion
                            4 cloves garlic
                            * add to pan and saute until soft (3-5 minutes)
                            1 bay leaf
                            2 tblspns fresh sage (I've used dry, just use less)
                            1 cup dry white wine or broth
                            * Add and cook until 1/2 the liquid evaporates, about 2 minutes
                            1 cup broth
                            1 cup pumpkin OR other winter squash cooked and pureed
                            * Mix in. Continue stirring until sauce starts to bubble. Add sausage and reduce heat.
                            1/2 cup evaporated milk
                            1/8 tspn grnd cinnamon
                            1/2 tspn grnd nutmeg
                            salt and pepper to taste
                            * Stir in milk. Add seasonings and simmer for 5-10 minutes to thicken. Remove bay leaf. Pour sauce over cooked pasta and heat through on stove top about 1 minute. Serve with freshly grated Parmesan cheese on top. Yum!
                            I have used regular milk and it works fine, just reduce the amount.

                                Pumpkin Cream Pie

                                So my Mom always makes pumpkin cream pie and I love it, but I never thought of making just the filling until the recipe or something similar was given out at weight watchers this week. SO GOOD!

                                Make 1 package of instant pudding as usual (vanilla, butterscotch or even cheesecake)
                                Mix in:
                                1/2 cup pumpkin
                                1/2 tsp pumkin pie spice
                                1/2 cup cool whip

                                (Fold in the cool whip last)

                                For Pie: Double the above recipe and pour into pie crust and top with cool whip!

                                Its low-cal if you make it with sugar free fat free pudding and low fat milk and still tastes amazing.
