  • Cookie pan dough recipes

I bought these cookie pans http://www.amazon.com/Wilton-Cavity-Halloween-Cookie-Pan/dp/B001U0OMQ2 on sale after Halloween last year. I tried a couple of different sugar cookie recipes but everything was too dry or solid. They either didn't spread into the mold or the cookie baked up puffy and dry.

    Any suggestions?

How about using a brownie or cupcake recipe instead? Like you would do with mini-muffin pans.

I'm thinking that you'd have to make something without eggs so it doesn't rise too much?

I did something like that years ago, and I think a shortbread type cookie worked best.

Score! Do you melt it in a double boiler or just in the microwave?

Microwave....20s increments and stir for 3/4 of the amount...once melted, add the remaining 1/4...I used milk chocolate chips. I also added about 1.5tsp of vegetable oil for shininess.

I forgot to tap the pan before putting in the fridge.
