I went to go look for my recipe book for my favorite apple fritters, but I couldn't find it. so sad. I did however find in online and then I also found The Official Vermont Maple Cookbook my mom got me. Here is the fritter recipe and a recipe from the Vermont book:

        Stephenson's Apple Farm Apple Fritters

        • Place orange in food processor, chop finely.
        • In bowl combine, milk, butter and eggs. Add apples, orange and vanilla.
        • Stir in dry ingredients.
        • Drop by teaspoon into hot oil and fry until golden brown. Roll in powdered sugar.

        Maple Glaxed Maple/Apple Nut Ring

        2 cups chopped apples
        1tsp baking soda
        1/2 tsp sald
        1tsp cinnamon
        1/2 tsp nutmeg
        1 teaspoon bakin powder
        1c white sugar
3/4 c pure vermont maple syrup
        2 eggs
        1/2 c veg oil
1/2 cup chopped nuts and 1/2 cup for top
        2.5 c flou

Preheat over to 350 degrees. combine eggs, oil, and maple syrup. Add remaining ingredients and sir well. Pour into greased tube cake pan. sprinkle with chopped nuts. Bake 45 minutes. Glaze when cool with maple glaze. Serves 12

        Maple Glaze
        1.5 cups confectioners sugar
pure Vermont maple syrup (about 1/2 cup/enough to make a glaze consistency)
        blend ingredients until smooth.

I made a super easy/super yummy apple butter in the crock pot. 8 to 10 apples, 2 to 3 cups of sugar, 1.5 generous tablespoons apple pie spice. Cook for hours, blend.

I just made the apple dumplings that Lily posted the other day (by Pioneer Woman) and I second her observation that they are fab! Devine! (I actually gave most of them to the neighbors so I wouldn't eat the whole pan!)

Anyone familiar with Arkansas Black apples? They are supposed to only be a cooking apple - not to be eaten raw. Got them in my organic veggie/fruit basket delivery today with a note that they would be great in sauce or cakes??
