  • Any Baristas out there?

I got the proverbial espresso machine for the wedding and I try and make a latte every once in awhile. Every time I try to steam the milk I end up with so much foam I have to stop and scrape most of it out before continuing. I'm using cold nonfat milk...any tips?

I always wished I could do a (short) stint at Starbucks just to learn how to make everything.

I'll ask my dh. What kind of machine do you have, in case he asks.

Does your steamer have a frother-attachment (often it just pulls off)? If so, remove it and it might help. Also, try to steam more from the bottom/middle of the container and not the top surface. You are using a steaming mug (silver pitcher thing?) and not the drinking-out-of up right? You should also watch your temperature, that could help too -do you have a thermometer?

It has a ~3 inch steam wand...not sure if that is the same as a frothing attachment. I have a frothing pitcher, but it might be too big--I cant get the wand all the way to the bottom. I do have a thermometer--the stuff just froths everywhere before it can get hot.

I had the same problem, I'd get froth before the milk would warm up! What I discovered was that there was a metal sheath-like attachment that pulls off to reveal a thin steam wand. I had no idea that this came attached when I got the espresso machine. Once I removed it, I could actually make lattes.

Most of the time I microwave the milk a little and then froth. That is surely not the barista answer.

Hmmm...there is a rubber cover that is supposed to go over it while you froth...maybe that is it?

Try taking it off and see what happens. Mine was never really illustrated/mentioned in the manual. Totally weird. Oh - and I should mention that I have never been a barista, but I've owned espresso makers since I was in the dorms in college! :P Good luck!

P.S. Don't forget to wipe down your frothing wand when you finish steaming AND pulse a little steam out to remove any milk that might have snuck up into the wand (ick).
