    Can it be done? Specifically we're wanting to freeze some hot and sour soup...

    Anyone with any experience freezing it?

    Yes. Freezing tofu changes it's properties. It gets chewier & gets a little yellow in color. It's browns up quicker/better than unfrozen. I've read that you should drain & press before freezing but I've always just thrown it in the freezer still in its pack undrained. Once it thaws I squeeze & press out the water. I usually crumble it up & use it as a ricotta substitute or as fake ground beef with taco seasoning for taco salad. It has a more meaty texture but is light & delicate.

      I've always used it as a filler rather than try to cube it once it's been thawed and drained. It crumbles faster when it's been frozen.
