  • Hatch Chilis?

They're in season and every store around here is selling them/roasting them for dirt cheap. Any good recipes? We're usually not big on peppers, but I'd hate to miss out on something good!

I don't like 'em (southwest blasphemy!). But I do like this blog, and she has quite a few recipes with green chiles. Here's one: http://userealbutter.com/2010/07/20/...chiles-recipe/ And then if you go to her recipes page, there are a bunch more.

They are all over here too. I'm going to try some mild ones soon. People here by them by the 30lb bag & get them roasted outside the store. I've asked a few people & apparently they freeze them for year round consumption. I've heard people put them in just about everything here - eggs, sandwiches, soups, in casseroles, make sauce from them for enchiladas, etc.

Oh geez, I cannot tell you how much I hate those damn things. The look, the taste, the fact that people use them to decorate. Seriously, I just do not get their popularity at all.
Hey Oceanchild, we agree on something!!

We're very much pepper people, but we prefer habaneros. We have thrown hatch chiles in a homemade salsa recently and they turned out okay, not my favorite pepper though.

I agree with you - it's uncanny. You must be my Doppleganger, C!
I'm a true fire-eater, and I like my peppers with a unique flavor as well as heat. The hatch chili is okay for flavor, but doesn't really bring the heat I'm looking for.

Being a native New Mexican, I was shocked (and proud!) to see this thread title!!! I actually didn't realize our green chile had such a wide distribution range! What Ides said is absolutely true, people here put green chile in EVERYTHING! Truth be told, I've never really completely understood it. Despite being hispanic, I'm a complete gringa when it comes to food. Up until VERY recently, I wasn't able to tolerate even the mildest of spicy foods. Perhaps it's the reality of moving away soon, but I'm just starting to appreciate and enjoy green chile. My sister has an awesome green chile chicken cheese dip that I crave during football season. I know it's fairly simple to make, I'll get it from her to post here.

Tara, it's comforting to know that we'll still have access to some comfort foods from home when we get to Tucson. Even though I've actually never bought a sac of chile, I always enjoy the familiar scent of the grocery stores roasting them.

I don't understand the need to drench EVERYTHING in green chili sauce... It drives me nuts out here. No, I don't want green chili on my steak, nor do I want to drink green chili wine thank you very much. That being said I just made a fabulous green chili pork stew this week because we got a ton in our harvest box and I had to use some up. I would highly recommend doing that. Yum! I plan on trying a biscuit recipe with them this weekend.

I love roasted peppers- hatch are great but so a lots of other ones. I throw them in lots of stuff- I buy some and freeze them. Pretty much any recipe that calls for any kind of chili or roasted pepper, I'll use the hatch ones.

I love seriously spicy food though.

Sounds like it! Watch out though, Bean will be eating jalapenos in no time (my dd loves them at 15 months...)!!

This reminds me of our youngest DD. At 7, she's the only one out of four of us who orders salsa or asks for chile when we go out to eat at Mexican restaurants. Too funny! She is the one who has me aquiring a taste for the stuff, you'd think it would be the other way around!

I saw some in the grocery store last night and sniffed. I like heat, but I hate that "pepper" taste. DH and I both hate bell peppers...they almost taste metallic to me. I wonder if we can taste something in them most cant? Will be interesting to see if the kiddo likes them. I hope not!

So I decided to pass after all that!
