Precooked or dry? We often use the precooked polenta, cut it into 1/2" rounds and warm in a frying pan. Then we serve in little towers with polenta round+refried black beans+fresh cilantro and salsa. It is fast, easy & filling, but not really THAT creative.Wife to PGY4 & Mother of 3.

YES! http://darksideofthefridge.wordpress...-whats-a-grit/ This was great.
Back in Romania we also used to eat it with milk. Just chunks of cooked polenta in a bowl of milk. You can also layer polenta with cheese while it's still hot so the cheese melts. Layer after layer. Om nom nom! And then, as if that's not unhealthy enough, serve it with a dollop of sour cream and some shredded cheese for good measure. Sorry, I have no recipes for those. I play it by ear.Cristina

My mom does it with marinara, sauteed veggies, and some sort of parmesan cheese. I'm not a fan, (due to texture), but everyone else loves it.Wife to Family Medicine attending, Mom to DS1 and DS2
