Great site thanks! I'll check it once I am on the comp. One of my biggest problems w/vegan baking is the requirement for nuts/nut butters for texture. :/ Some recipes hold their own well, others get outright rejected by the pipsqueak. *sigh*

I was thinking about you today. A couple of the cookie recipes I am using for the cookie exchange happen to be vegan. We'll see how they turn out before I share!!

Also, not a cookie, but the best carrot cake I have ever made is egg/dairy free. Let me know if you want the recipe.

Yes please! That would be great!! I love carrot cake, but haven't made any in a long time because I feel guilty eating things in front of dd that she cannot eat.

Holiday cookie question ---I've been reading a lot of gingerbread and sugar cookie recipes that instruct to refridge the dough overnight (or at least 3-4 hours). Is this a must-do? Cut-outs have never been my thing!

It makes cutting way easier! But you can usually sub 30 min or so in the freezer instead!

My friends have been raving about these white chocolate cherry almond shortbread cookies. Making them for Christmas Eve.

I've never done that with sugar cookies. I don't do cut-outs either. If you're not doing cut outs, I don't see why it's necessary.
