  • baking without eggs and dairy?

There's a sweet girl in our ballet company who is allergic to eggs and dairy. She loves brownies and I would love to be able to bake a sweet treat for her (she's so helpful and nice to the younger dancers). Where can I find recipes and substitutions? DH said he would go out to look for soy butter in the morning, but we have to be at the theater at 11 and I would love to have a batch of something yummy for her when we go.

Thank you!!!! I do have all the ingredients! Perfect -- I found that Super-Target doesn't carry soy butter. I don't like baking with margarine.

She can only have chocolate without milk. I'll have to look at the chocolate chips in my stash. I may have some that are milk-free.

Nope, you have to be very careful with this assumption.

We only make recipes that use unsweetened cocoa powder (usually this is truly dairy free) and Joy of Cooking has an excellent chocolate cupcake recipe that doesn't use egg or dairy (only oil, no fake butter subs). It was tasty and my kiddo had no problems. Good luck!!

Email mom and ask for her favorite recipies. You're very thoughtful.

Brownies are baking! The Ghiradelli chips I have do not have milk, but do have cocoa butter. I didn't use them because I wanted to clear all ingredients with her or her mom and I figured they would both be sleeping after a long week.

Her mom uses soy butter and leaves eggs out of recipes. That's how she bakes for her. She has 5 kids (her ballerinas are 16, 10, and 8) so I don't think she has time to track down special recipes for one. Teehee!

I've had a lot of success with the recipes in this book:

                      http://www.amazon.com/Joy-Vegan-Baki.../dp/B004R1Q0XY

a bunch of specialized ingredients, but I'm very much like you in my baking generally - fresh, real everything - and I've still been pretty impressed with the results

for some reason I spent a couple years really getting into vegan baking, just like as a challenge or something

She loved them! They didn't taste right to me though, but it isn't what I'm used to. Next time I'll add the ghiredelli chips. I checked the ingredients with her.
